Double Heart Grooms Cake

Double Heart Grooms Cake

The following ingredients was used in making this double heart grooms cake.

Light Fruit Sponge Cake

2-1/2 cups butter
4-1/2 cups sugar
12-eggs
2-1/2 tsp vanilla
2-1/2 tsp almonds extract
2-1/2tsp of lemon juice
8/3/4 cups sifted flour
10 tsp baking powder
2-1/2 tsp salt
2 lbs sultans
2 lbs currants
2 lbs mixed candied fruits
1 lb cherries

Method
cream butter and sugar until light and fluffy in cake mixer add eggs one at a time until incorporated mix in half of the flour and baking powder alternately with milk.
Then take the ramaining flour and add fruits and mix fruits until floured. Add floured fruits to cake batter add extract and lemon juice to the mixture. Fold flour fruits in the cake batter until combined.

Pour mixture into 8" and 12" heart cake pans and bake at 350 degrees for 8" 30 minutes and 12" for 45 minutes or until cake tester inserted in the center of the cake comes out clean.

Remove from oven and allow to cool in cake pan.

To decorate the cake

4lbs of prepared fondant
1 lb butter cream frosting
1 lb of royal icing
love doves small and medium size
roses

Prepare cake by removing from pans brush of excess crumbs and paste with butter cream icing, then roll out prepared fondant and cover both cakes.

Use a tooth pick to draw design on cake and decorate with cornelli lace using the royal icing. Apply fills to the areas identified on the cake and decorate with love doves and royal icing roses as shown.

To the top of the cake add cherub decorated with forget me not and your all done.
