Summer Romance Wedding Cake

Here is how I started to make this summer romance wedding cake:

1. I baked 4 double layered chocolate cakes in 15,20,25,30cm diameter tins, using a basic chocolate recipe.

2. Place each tier on a separate cake board. I sandwiched the layers with rich chocolate mousse and placed in the refrigerator for approximately 4 hours.
For the decoration I used white chocolate ganache which I prepared as follows:

3. Heat 500ml double thick cream with 700g white chocolate in a double boiler. Leave aside for the chocolate to melt completely.

4. Stir through and leave to stand overnight or until it reached room temperature.

5. Beat the ganache until a thick creamy spread.

6. Spread each tier with the creamy ganache. For the collars I used acetate paper, cut to the size of each tier with 3cm extra to fit around the cake and the correct height. Because my cake was quite high, I made my collars 13cm high.

7. Melt 1kg white chocolate over low heat in a double boiler.

8. Put your five dowels in your bottom tier (30cm) and place your second tier (25cm) on top of the bottom tier then 4 dowels and third tier (20cm) and lastly 3 dowels and fourth tier (15cm)

9. For the broken tiles on the 2nd and last tier, you place your acetate in a tray and pour melted chocolate until approx. 3mm thick. Spread evenly and wait to set. Before it is set completely cut away the edges and cut in tiles. (You can make different heights)

10. Start decorating from the top and work your way down. Paste the tiles onto the 4th cake tier. The tiles will stick to the creamy ganache.

11. I used a piping bag, made from baking paper, to draw circle movements on the acetate sheet.

12. Leave for 2-3 minutes or until the chocolate has just set, but is still plyable and lift the sheet off the working surface and fold it around the 3rd tier.

13. Repeat the tier with the tiles for the 2nd tier and the bottom tier with the lace collar.
Decorate with some Lindt Chocolate truffles or homemade chocolate truffles.

Voilla!!! You have created a master piece!!!

I have used ganache to attach the chocolate truffles to the polystirene dummies.

What a great wedding cake. do you have any suggestions about doing a similar thing but putting lindt balls on the ganache so that it looks like the amazing lindt ball cake on their site?
I need to do this for my sons wedding in July and would appreciate your help.
