Elegant Wedding Cakes
Elegant wedding cakes such as this one are sure to be admired at any wedding. This is a 3 tier square wedding cake with fresh red roses. To make this wedding cake, bake 2 square layers of each size-16"-12"-8".
Each layer size can be a different flavor and have a filling if the bridal couple desires it. After you have baked all of your cakes, make a white buttercream icing.
Put your layer sizes together accordingly putting them on a cardboard cake square the size of that cake. At this time place the 16" cake on the cake base.
On this elegant wedding cake I used a 18" square of plywood covered in silver foil. Now slide the white cake ruffle under the base cake to the stitching line. I use a regular butter knife to do this. Next put a thin layer of icing on each cake to catch the crumbs. This is referred to as the crumb coat.
Let this set for 2 hours. Now ice each layer making sure it is nice and smooth. Let it set about an hour. Using an icing filled bag and the round tip #5 decorate the sides and the tops of the 8" and the 16" cake in the allover lacework design.
On the 12" cake make a triangle of 3 dots with 2 dots being on the top and the 3rd dot centered underneath the above dots. Space these triangle of dots about 2" apart all over the sides and top of the 12" cake.
Change the tip on your icing bag to the #8 star tip and put a shell border on the top edge of all the layers. I assembled this stacked cake using hidden pillars and plastic separator cake plates. Place the separator plate the size of the cake you will be placing on top of the cake below, such as the 12" you are placing on the 16", and center it on top of the 16".The feet of the plate will make 4 x's on the cake top.
It is over these x's you will center your hidden pillars and push in to the bottom of each layer. Cut your first hidden pillar level with the cake top. The other 3 pillars must be the same size as the first one. Place all the pillars over the x's. Now place the cakes on the cake separator plate,etc.)
The cake will be assembled at the site. Gather everything you will need to assemble the cake and pack in a bag,---extra icing, cake spatula to smooth any mishaps, etc. Don't forget wipes and paper towels. Remember you have to be prepared for anything that might happen during transport.
Place all the cakes on foam in vehicle to transport. I just bought a foam mattress pad and cut it to fit my vehicle. The foam keeps the cakes from moving, Place cake base on the cake table. Take the next size cake-12"-and place on the 16"cake. The feet on the bottom of the plate will fit into the hidden pillars below. Repeat process for the 8" cake on top of the 12" cake. Using the star tip #18 make a shell border on the bottom of each layer.
On this elegant wedding cake I put another shell border on top of the first one so that I had two rows of the shell border at the base of each layer. The florist then placed the roses on the cake and sprinkled rose petals around the cake.
The bouquet that the bride throws was even placed by the cake.
