My Wedding Cake
by Amanda Siciliano
This wedding cake was my first cake aside from and occasional birthday cake over the years. BTW...don't make your own cake lol. I used cake mix because I was nervous about the decorating and didn't want to have to stress about the batter.
It was my first time working with fondant but I researched techniques for months and I think, ultimately, it turned out great and it tasted even better!
The top and middle layers are lemon cake with raspberry filling and lemon flavored buttercream icing ( I did make the icing myself, I used lemon pie filling to flavor it...turned out awesome!)
The bottom layer was devil's food chocolate with french vanilla butter cream icing. I used 5 boxes of chocolate cake and 4 boxes of lemon.
I covered each layer with white MMF ( that was fun to make but messy! Ive gotten much better at it..a rubber spatula is essential!)
I used sheer brown edged with a satiny trim floral ribbon for the bottom of each layer. The flowers are actually from a flower arrangement I bought at a thrift store and loved, it inspired the whole theme of my wedding.
I put red and orange beaded garland under and around the flowers to give it some character and incorporate the colors from the bridesmaid bouquets.
I used corsage pins to attach the flowers and tucked some white tulle in between the flowers on the top layer to fill in the gaps a bit. I was so stressed but it turned out exactly as I had hoped and it made our day that much more special:)
